Combine lemon juice and oil in medium bowl and whisk briefly. Combine honey and vinegar in small bowl and stir until honey is dissolved. Add to lemon juice mixture. Blend in salt, pepper and garlic powder. Add onion and sherry and mix well. Transfer to airtight container and refrigerate overnight.
