The Recipe

Sardines (2 cans) 1 sm Onion chopped

1/2 Green pepper, chopped

6 oz Tomatoes (1 small can)

1/2 Garlic clove, crushed

1 pn Salt and pepper

2 tb Cooking oil

1 c White rice (raw)

2 c Water

Heat the oil in a small frying pan. At the same time place the water, rice and a pinch of salt into a small saucepan and simmer for 15 minutes. Place the chopped onion and pepper in the frying pan and cook until the onion becomes soft. Add the tomatoes, garlic, sardines, salt and pepper to the frying pan and cook until for 10 to 15 minutes, stirring occasionally. Serve over the rice. NOTES: * Sardines with garlic and tomato -- A quick and easy meal for two people.
